Laughing Jack The Limited Two Shiraz 2016

Laughing Jack The Limited Two Shiraz is a two-barrel selection of Barossa Shiraz from a dry-grown parcel at Greenock.

The source is a three-acre, dry-grown patch inside the East Hill Block at Greenock, planted in 1999, and what goes into bottle is whatever the best two barrels turn out to be, about 800 bottles. In 2016 Shawn Kalleske was impressed enough with the flavour of a very small crop, and with how thick and chewy the skins stayed, that he gave it three pump-overs instead of the usual two; after twenty-one days, he said, the skins looked much as they had on arrival. New French hogsheads carry the maturation, a departure from the seasoned oak he prefers elsewhere.

Almost impenetrable crimson-purple, with morello cherry, fresh earth and cedar from the new oak. The firmest, most structured wine in the range, and the balance of fruit, tannin, oak and acid is right. Decant it, use a big glass, and serve at 18 degrees with dry-aged rib eye.
