Clam Linguine
Ingredients:
- 400g linguine
- 1kg fresh clams, cleaned
- 3 garlic cloves, minced
- 1/2 cup dry white wine
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water.
- In a large pan, heat olive oil and sauté garlic until fragrant.
- Add clams and white wine, cover, and cook until clams open (about 5 minutes).
- Toss cooked linguine with clams and sauce, adding reserved pasta water as needed.
- Season with salt and pepper, garnish with parsley, and serve warm.
