Description

Le Ragose Valpolicella Classico DOC is a youthful, vibrant red wine from the hills of Veneto. Made from 50% Corvina, 20% Rondinella, 20% Corvinone, and 10% other local grape varieties, it offers bright aromas of sour cherry, red berries, wild herbs, and a touch of spice. Fresh and juicy on the palate with fine tannins and a savoury, elegant finish. This is a medium-bodied wine best enjoyed within one to two years of release to fully appreciate its fragrance and liveliness.

Recipe

Gnocchi al Ragù di Verdure (Gnocchi with Vegetable Ragù)

Ingredients:

  • 500g potato gnocchi
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 celery stalk, chopped
  • 1 small onion, finely chopped
  • 400g canned tomatoes
  • 2 tbsp olive oil
  • Salt, pepper, fresh basil to taste

Instructions:

  1. Sauté onion, carrot, celery, and zucchini in olive oil until soft.
  2. Add tomatoes and simmer for 20 minutes. Season with salt, pepper, and basil.
  3. Cook gnocchi until they float. Drain and toss with the ragù.
  4. Serve hot with grated cheese and a glass of Le Ragose Valpolicella Classico DOC.
