Les Quatre Piliers Touraine Première Cuvée Sauvignon Blanc Chapitre 1 2022

Les Quatre Piliers Touraine Première Cuvée Chapitre 1 is a barrel-fermented Sauvignon Blanc from a single west-facing site above the Cher.

Touraine covers a broad swathe of the central Loire and produces a great deal of straightforward Sauvignon Blanc, so a wine made along these lines stands apart. Les Puits aux Chiens is the highest point of the commune of Noyers, on the right bank of the Cher, a cool terroir of shallow flint sands and white clay over Turonian limestone, with vines between 20 and 50 years old. The fruit is picked ripe and pressed as whole bunches, then ferments with indigenous yeasts in used barrels of 228 to 500 litres. Some of those barrels are made from oak staves cut in the nearby Loges forest, selected and seasoned by Valentin Desloges himself and coopered by François Frères. The wine ages twelve months with a single racking and long lees contact, and is bottled by gravity, unfiltered, with minimal sulphur.

Drinking now and worth four or five years. Serve at 10-12°C with grilled fish, roast pork or a herbed goat's cheese.
