This simple yet flavourful Catalan dish of rustic bread rubbed with ripe tomatoes, garlic, and olive oil is a staple in Spain’s tapas culture. The fresh acidity and fine bubbles of this Cava cut through the richness of the olive oil, making for a refreshing and classic pairing.
Ingredients (Serves 4):- 4 slices of rustic country bread or ciabatta
- 2 ripe tomatoes
- 1 garlic clove, peeled
- 3 tbsp extra virgin olive oil
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- Optional: thin slices of jamón ibérico or manchego cheese
- Toast the Bread: Lightly grill or toast the bread slices until golden and slightly crisp.
- Rub with Garlic: While the bread is still warm, rub one side of each slice with the peeled garlic clove.
- Rub with Tomato: Cut the tomatoes in half and rub the cut side onto the garlic-rubbed bread, allowing the juices and pulp to soak in.
- Drizzle with Olive Oil: Drizzle extra virgin olive oil over each slice.
- Season and Serve: Sprinkle with flaky sea salt and freshly ground black pepper. Serve immediately, optionally topped with jamón ibérico or manchego cheese.
