- 2 cups ripe tomatoes, diced
- 1/2 cup pitted olives, chopped (preferably Kalamata)
- 1 garlic clove, halved
- 2 tbsp extra-virgin olive oil
- 1 tbsp capers, rinsed
- Fresh basil, roughly chopped (about 1/4 cup)
- Salt and pepper, to taste
- Optional: A drizzle of balsamic glaze
Instructions:
- Preheat your oven to 180°C. Arrange the baguette slices on a baking sheet and toast until lightly golden, about 5–7 minutes.
- In a bowl, combine the diced tomatoes, chopped olives, capers, and fresh basil. Drizzle with olive oil, season with salt and pepper, and mix gently.
