Maison C. Thiriet Bourgogne Aligoté Du Jardin blends three old parcels, one of them a hundred-year-old plot in Meursault.
Aligoté has spent most of the past century as Burgundy's second-string white, but old plantings on good ground are now being taken far more seriously. Du Jardin is a blend of old-vine Aligoté Doré from near Pommard, a ninety-year-old parcel in Corgoloin that Camille Thiriet calls her garden, and a third plot, Les Basses Gouttes, in Meursault, where the vines are a century old. Yields from vines of that age are very small, which accounts for much of the wine's intensity. The fruit is pressed together in a vertical press and raised for nine months in old oak, a fifth of it new, with a small but decisive period of skin contact that adds texture and grip well beyond what the variety usually delivers.
Drinking well now and good for four or five years. Serve at 10-12°C with oysters, grilled sardines or a plate of gougères.
