Recipe

Truffle Risotto

Ingredients:

  • 1 cup Arborio rice
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable stock
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp truffle oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Heat olive oil in a pan. Sauté onion until translucent. Add Arborio rice and toast for 2 minutes.
  2. Deglaze with white wine and reduce slightly. Add stock one ladle at a time, stirring until absorbed.
  3. Once rice is creamy and tender, stir in Parmesan, truffle oil, salt, and pepper.
  4. Serve garnished with parsley and additional Parmesan.
