Ingredients (Serves 4):- 300g Arborio rice
- 2 lemons (zest and juice)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 cup dry white wine
- 1L vegetable stock, kept warm
- 50g Parmesan cheese, grated
- 2 tbsp butter
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Sauté Aromatics: Heat olive oil in a large pan over medium heat. Sauté the onion and garlic until softened.
- Toast the Rice: Add the Arborio rice to the pan and stir for 2 minutes until lightly toasted.
