Ingredients (Serves 4):
  • 300g Arborio rice
  • 2 lemons (zest and juice)
  • 1 small onion, finely chopped

  • 2 tbsp olive oil
  • 1/2 cup dry white wine
  • 1L vegetable stock, kept warm
  • 50g Parmesan cheese, grated
  • 2 tbsp butter
