Risotto al Limone (Campanian Lemon Risotto)
Ingredients:
- 300g Arborio or Carnaroli rice
- 1 small onion or shallot, finely chopped
- 2 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1/2 cup dry white wine
- 1L vegetable stock, kept warm
- 2 lemons (zest and juice)
- 50g Parmigiano Reggiano, finely grated
- 2 tbsp butter
- Salt and white pepper, to taste
- Fresh parsley or basil, finely chopped (optional)
Instructions:
- Heat the olive oil in a wide pan over medium heat and gently sauté the onion and garlic until soft and translucent.
- Add the rice and stir for 1–2 minutes until lightly toasted and coated in the oil.
- Pour in the white wine and allow it to evaporate, stirring continuously.
- Add the warm stock one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
- Continue cooking for 18–20 minutes until the rice is tender but still al dente.
- Remove from the heat and stir in the lemon zest, lemon juice, butter and Parmigiano until creamy and well combined.
- Season to taste and finish with fresh herbs if using, then serve immediately.
The bright citrus and creamy texture of this risotto enhance the wine’s crisp acidity, mineral backbone and subtle almond notes, creating a refined and harmonious Campanian pairing.
