Mayacamas Vineyards Cabernet Sauvignon 2003

Mayacamas Vineyards Cabernet Sauvignon is a mountain-grown Napa Valley Cabernet from high on Mount Veeder.

The 2003 growing season swung about: a spring of heat spikes and heavy rain, then a genuinely cool summer that stretched ripening out for months, finished off by a late burst of warmth. At close to 700 metres on Mount Veeder, above the fog line, the vineyard has the longest season and the lowest natural yields in Napa, and a year like this suits it. Fruit was destemmed and fermented around two weeks in cement, then spent two years in old foudres of American oak, French oak and local redwood, a third year in barrique with 10 per cent new, and two more years in bottle before release.

Two decades on, this is in its stride: cedar, dried blackcurrant, tobacco leaf and forest floor over tannin that has turned fine and dusty. Decant it, serve at 18 degrees, and pair it with roast beef, mushrooms on toast or a mature cheddar.
