Description
MDI Grillo is a skin-fermented white made from Sicilian Grillo grown at Mildura in the Murray Darling.
Grillo is built for heat, which makes Mildura a sensible place to put it. The vines grow at Vanden estate on VSP trellis, unusual for a region that mostly does things differently, and the site is farmed with sustainability front of mind. It backs onto Kings Billabong, and that body of water takes some of the edge off the growing season. Fruit was hand-picked in the last days of February, destemmed, and put into stainless steel fermenters, where it sat on skins for 170 days before pressing to old barrique for five months. Full malolactic, then bottled without fining or filtration.
Almost half a year on skins leaves it golden, chewy and thoroughly dry, with preserved lemon, salted almond and a herbal bitterness on the close. Serve at 13 degrees. Good with grilled octopus, caponata, or a plate of pecorino and bread.
