Description
Meadowbank Blanc de Blancs is a traditional-method Tasmanian sparkling made entirely from Chardonnay.
This is the first Blanc de Blancs off the estate, drawn from a block in the Far Horse Vineyard that sits close to the Chardonnay rows but faces the other way, south, into a slightly cooler pocket where the fruit holds its acid for longer. Peter Dredge made it about as artisanally as the method allows: hand-picked fruit, whole clusters into the press, and three months of fermentation in old barriques instead of tank. Five years on lees in bottle followed, and the dosage was held to two grams per litre at disgorgement, which leaves nothing standing between you and the wine.
Fine, dry and taut, with lemon curd, toasted brioche and a chalky oyster-shell finish drawn out by Tasmanian acidity. Serve at 8 degrees in a white-wine glass, with freshly shucked oysters, salt-and-pepper squid, or a plate of good jamon.
