Meadowbank Blanc de Noirs 2019

Meadowbank Blanc de Noirs is a Pinot Noir sparkling from the Far Horse Vineyard in Tasmania.

Second release of this wine, and the source is a north-east-facing block on a rolling five-degree slope where sandy soils sit over coffee rock, the iron-cemented sand that runs through the property. This one was vinified in stainless steel, and the juice selection was severe: only 300 litres per tonne was used, where 500 to 550 is the industry norm, meaning nothing beyond the very cleanest fraction of the press went into the wine. Three years on lees followed, with three grams per litre of dosage at disgorgement. Peter Dredge releases the Pinot-based wine younger because Pinot takes on lees character sooner.

Taut and mineral, with red apple, citrus peel and a fine chalky texture, the fruit more suggested than stated. Serve at 8 degrees as an aperitif, or with sashimi, a chicken and leek pie, or a wedge of gruyere.
