Description
Meltwater Marlborough Sauvignon Blanc is a dry, crunchy Sauvignon made without the region's usual signatures.
Very little Marlborough Sauvignon is handled this way. The grapes grow on a sustainably farmed block in the hills at the Wairau's southern margin, and they are picked by hand into small bins while the district harvests by machine almost without exception. Fermentation runs in tank on wild yeast, rarer still. The wine was taken to dryness and aged on lees through six to eight months of winter, racked and left to settle before a February bottling. Mike Paterson of Corofin makes it, and the aim is a wine that tastes of a vineyard instead of a category.
Lifted, pure aromatics of fresh basil and mandarin, then a racy palate with mandarin peel, ripe apple and a crisp acid backbone. None of the usual stereotypes. Serve at 9 to 10 degrees with oysters, goat's cheese, or grilled asparagus.
