Meltwater Marlborough Sauvignon Blanc 2021

Meltwater Marlborough Sauvignon Blanc is a low-cropped, certified organic Sauvignon Blanc from the Wairau Valley foothills.

One vineyard supplies it: a certified organic block in the southern foothills of the Wairau, cropped low, hand-harvested into small bins and fermented on indigenous yeast in tank. Mike Paterson explains that during a natural ferment a good share of malic acidity drops out, which broadens the palate and lets him ferment every gram of sugar without leaning on artificial balance. Nine months on lees through winter followed. Almost nothing about that approach is standard for the category, where machine harvest, cultured yeast and a touch of residual sugar are the norm.

Pungent and aromatic on opening, then well-textured, crisp and moreish, driven by tangy energy into a mouth-watering finish. It does what Marlborough Sauvignon should at the price, and a fair bit more. Serve at 9 to 10 degrees. Whitebait, goat's cheese, or a niçoise salad.
