Meltwater Marlborough Sauvignon Blanc 2022

Meltwater Marlborough Sauvignon Blanc is a hand-crafted, organically grown Sauvignon Blanc from the southern Wairau foothills.

This second label exists because Mike Paterson thinks the category can do better, and the wine is made accordingly. One certified-organic block, held to a small crop, supplies it — hill country on the Wairau's southern edge. Bunches go into small bins by hand and ferment in tank on their own yeasts. Apart from the stainless steel, none of that counts as standard practice for Marlborough Sauvignon. Nine months resting on fine lees followed, which is where the texture comes from and what sets this apart from the sharper, sweeter wines filling the shelves.

More substance than the category usually allows: citrus and herb aromatics over a broad, dry palate with lees texture and a tangy, saline close. Serve at 9 to 10 degrees. Oysters, snapper with lemon, or prosciutto and melon.
