Murdoch Hill Adelaide Hills Sulky Riesling is a chalky, mouthwatering Riesling from Macclesfield.

Ironstone bedrock under well-established vines of twenty years and more, in a small and sustainably managed vineyard at the southern end of the Adelaide Hills: that is the whole story of the site. Hand-picked fruit went whole-bunch to the press and straight into 1500-litre foudres for a spontaneous ferment, then three months on fine lees before moving to tank for a further two ahead of bottling. Whole-bunch pressing keeps phenolics low and the lees time supplies the texture, which is the balance Michael Downer is after in this wine.

White florals and citrus form a powerful core, framed by chalky texture and fresh, driving acidity. Textural and mouthwatering, and a long way from the standard South Australian template. Serve at 9 to 10 degrees with oysters, ceviche, or a Thai chicken salad.
