Ocean Eight Aylward Chardonnay 2021

Ocean Eight Aylward Chardonnay is the estate's flagship Chardonnay, a fine, cool-grown white from the Mornington Peninsula.

Only the best estate fruit makes it into this family-named bottling, which sits at the top of the range and is made for finesse and length. The vineyards around Shoreham look out towards Western Port from the Peninsula's cooler, higher ground. Fruit is hand-picked and gently handled, and the oak is kept in check.

Tightly focused and mineral, with citrus and white peach. It will reward several years in the cellar. Serve at 10–12°C with crayfish, roast chicken or pan-fried snapper.
