Old Kempton Port Cask Strength Single Malt Whisky 500ml

Old Kempton Port Cask Strength Single Malt Whisky is a Tasmanian single malt bottled undiluted from old Tawny casks.

Seppeltsfield and Yalumba supplied the wood here, casks that spent decades holding Tawny of 30 to 40 years average age before Rob Tyson got hold of them. How deeply each is shaved depends on its age; toast is always medium and char always heavy. The wash is Tasmanian barley grown and malted at Cambridge, a short drive from the distillery, and Tyson works with the brewer from the outset so it comes in to specification. Double distillation runs through squat Knapp Lewer copper pot stills built in Hobart, and the spirit sits five to six years before blending. No water goes in at bottling.

Raisin, brown sugar and dark chocolate, with the extra strength pushing fruit and oak tannin forward together. Take it neat at room temperature in a tulip glass, then add water a few drops at a time. A robust choice after dinner, or in a stirred cocktail.
