Old Kempton The Old Stables Single Malt Whisky 500ml

Old Kempton The Old Stables Single Malt Whisky is a Tasmanian single malt bottled at 40.5% ABV.

The name belongs to the stables on the Dysart Estate, now housing the distillery itself. Cask make-up runs roughly 60 per cent ex-Australian Tawny and 20 per cent Apera, with Pinot Noir, Bourbon and a small amount of fortified Shiraz filling the rest, a blend built for accessibility as much as for depth. Barley is grown and malted at Cambridge nearby, made to Rob Tyson's specification in consultation with the brewer, then run twice through the distillery's Hobart-built Knapp Lewer copper stills and aged five to six years. This is the entry point to the range and the fruitiest thing in it.

Raisin and citrus fruit in balance, with layered spice, green almond and hay. The palate turns malty and grainy with a faint medicinal cleanliness, the texture rich and buttery, the finish dry and nutty like pecan pie. Neat at room temperature, or over one large cube.
