Old Kempton Winter Special Release 2022 500ml

Old Kempton Winter Special Release 2022 is a Tasmanian single malt finished in an old Muscat cask at 60.8% ABV.

Second-fill Port casks held this spirit for around five to six years before it was transferred, in May 2021, into a Muscat cask over sixty years old, the sort of wood that leaves its mark quickly and is increasingly hard to come by in Australia. Barley for the wash is grown and malted at Cambridge, near the distillery, to Rob Tyson's specification. Double distillation takes place in the squat Knapp Lewer copper pot stills made in Hobart. Bottling happened at full cask strength, so everything the Muscat wood contributed arrives undiluted.

Raisin, toffee and dried orange from the Muscat cask, with heat and concentration to match the strength. Neat in a small measure, with water added deliberately. Best after a meal, with dark chocolate or a plate of dried fruit and nuts.
