Description
Olivier Leflaive Chassagne-Montrachet is a village white from the southern end of the Côte de Beaune, where the greatest Chardonnay vineyards in the world begin.
Chassagne-Montrachet shares Le Montrachet and Bâtard-Montrachet with neighbouring Puligny, and its village vineyards run along limestone slopes on the same band of hillside. Historically Chassagne was as much a red wine commune as a white one, and Pinot Noir is still grown here, though Chardonnay has taken the larger share as demand and prices shifted. Olivier Leflaive founded his maison in Puligny-Montrachet in 1984 and works both as a grower and as a négociant, buying fruit from growers across the Côte de Beaune as well as farming his own vines. Village-level Chassagne is fermented and matured in oak barrel, with new wood used sparingly.
Serve at around 11 to 12 degrees with scallops, roast poultry or a gratin; village Chassagne rewards a few years in the cellar but does not demand them.
