Eggplant Caponata
Ingredients:
- 2 eggplants, diced
- 1 red capsicum, chopped
- 1/4 cup olive oil
- 1/4 cup capers
- 1/4 cup green olives, chopped
- 2 tbsp red wine vinegar
- 2 tbsp tomato paste
- Salt and pepper, to taste
Instructions:
