Tajarin al Ragù di Salsiccia (Piedmont Egg Pasta with Sausage Ragù)
Ingredients:
- 400g fresh tagliolini or thin egg pasta
- 300g Italian pork sausages, casings removed
- 1 small onion, finely diced
- 1 small carrot, finely diced
- 1 celery stalk, finely diced
- 2 tbsp extra virgin olive oil
- 100ml dry red wine
- 300ml tomato passata
- 1 sprig fresh rosemary
- 50g Parmigiano Reggiano, grated
- Salt and cracked black pepper
Instructions:
- Heat the olive oil in a large frying pan and gently cook the onion, carrot and celery until soft.
- Add the sausage meat and cook over medium heat, breaking it into small pieces with a wooden spoon, until lightly browned.
- Pour in the red wine and simmer for 2–3 minutes until most of the liquid has evaporated.
- Add the tomato passata and rosemary, then reduce the heat and simmer gently for 20–25 minutes until the sauce is rich and slightly thickened.
- Meanwhile, cook the pasta in a large saucepan of salted boiling water until al dente.
- Drain the pasta and toss it through the sausage ragù, adding a splash of pasta water if needed.
- Remove the rosemary, season with salt and cracked black pepper and serve with grated Parmigiano Reggiano.
