Paranubes Ron 700ml

Paranubes Ron is an artisanal sugar cane spirit distilled by José Luis Carrera in the mountains of northern Oaxaca.

Carrera works a trapiche, a small cane distillery, in the cool and humid highlands of northern Oaxaca, where his family has made aguardiente de caña for at least three generations. He grows four cane varieties across fourteen hectares — Caña Dulce, Caña Morada, Caña Dura and Caña Criolla — with the batches led by Criolla but taking in all four. The cane is cut by hand and carried to the still by donkey, and the fresh juice ferments naturally in 1,100-litre pine vats known as tinas, kick-started with a boiled starter made from mesquite bark, the only addition in the whole process. What sets the spirit apart from rhum agricole or cachaça is the rolling fermentation: half a vat is distilled each morning and refilled the same afternoon, so the ferment never stops.

Serve neat at room temperature, or over ice; it also stands up well in a daiquiri or a highball. Good alongside grilled meat, mole or salted tropical fruit.
