Philip Togni Vineyard Cabernet Sauvignon 2005

Philip Togni Vineyard Cabernet Sauvignon is a Cabernet-based red from the Spring Mountain District of Napa Valley.

Spring Mountain lies on the eastern face of the Mayacamas, northwest of St Helena, and is the coolest and wettest corner of the valley; the Pacific is 50 kilometres off and San Pablo Bay 40. Most vineyards there face east, avoiding the afternoon sun, and the terrain climbs as high as 800 metres. The Togni plot, ten hectares, organic and dry-farmed, sits above the fog line just over 600 metres up, ringed by oaks and Douglas firs, first planted in 1981. After a conversation with Paul Pontallier of Château Margaux, Togni matched his plantings to that estate: 82 per cent Cabernet Sauvignon, 15 Merlot, with Cabernet Franc and Petit Verdot completing it. Fruit has never been bought in, and never will be.

Two decades on, this sits in its mature phase: cassis giving way to cedar, tobacco leaf, dried herb and forest floor, the tannin settled and the acid still holding the frame. Serve at 18 degrees, decanted off any sediment, with roast lamb, aged beef or a mature hard cheese.
