Philip Togni Vineyard Cabernet Sauvignon 2018

Philip Togni Vineyard Cabernet Sauvignon is a mountain-grown Napa Valley red built on Cabernet Sauvignon.

Steep terraces, weathered sandstone and shale, and vines averaging better than three decades set the terms here. The estate lies above the fog line at just over 600 metres in the Spring Mountain District, on the eastern flank of the Mayacamas, the coolest and wettest part of Napa, cooled further by its east-facing aspect, the Pacific 50 kilometres west and San Pablo Bay 40 to the south. Everything is organic and dry-farmed, and the family has never bought a kilogram of fruit. Lisa Togni puts the thinking plainly: the site is special, and the wine is meant to reflect it. Plantings mirror Château Margaux, an arrangement her father settled on after talking it over with Paul Pontallier.

Firm, classical Napa Cabernet: cassis and dark plum with graphite, cedar and a dried-herb edge, the tannin tightly wound and the finish long. Decant well and serve at 18 degrees. Rare roast beef, lamb shoulder or a hard sheep's milk cheese, or another decade in the cellar.
