Philip Togni Vineyard Cabernet Sauvignon 2021

Philip Togni Vineyard Cabernet Sauvignon is a Spring Mountain Cabernet blend from a dry-farmed, organic estate.

Old-school classicism is the aim, and the practices follow from it: low yields, diligent canopy work so full ripeness arrives at modest alcohol, and early picking to hold natural freshness. The varieties are co-fermented, which the family believes reinforces the signature of the site. Grapes are sorted, gently destemmed, crushed, then cold-soaked three days; after twenty days co-fermenting the wine goes to French oak, 40 per cent new Taransaud and Nadalie, for twenty months. The vineyard is terraced steeply above the fog line at just over 600 metres, planted to Château Margaux's varietal proportions. Vinous named the 2021 its Wine of the Year for 2024.

Tightly coiled and mineral, with blackcurrant, violet, graphite and cigar box, the tannins fine and very long. Elegance ahead of weight. Decant an hour and serve at 18 degrees, with roast lamb, aged ribeye or hard cheese. It will reward a long stay in the cellar.
