Place of Changing Winds Heathcote Syrah is a whole-bunch Heathcote Syrah raised in large Stockinger casks.

All whole bunches in 2020, fermented naturally, with crushing and skin contact varied across the batches and some parcels taken through full carbonic maceration. The thinking at this address does not change: whole-bunch and whole-berry work is there to bring perfume and finesse to the natural power the region hands over. Fermentation was in concrete and steel, maturation mostly in large neutral Stockinger casks with a little older barrique and concrete tank, and less than 5 per cent of the oak was new. Encouraged by earlier trials, the team stretched élevage out to 18 months here, against twelve for the previous release.

Blue and black fruit, violet and pepper over a savoury base, with carbonic-derived crunch and a supple, silky middle. Serve at 16 degrees. Try it with duck sausages, lamb ribs or a lentil and roast pumpkin salad.
