Description

The Dogliani dei Poderi Luigi Einaudi was born in vineyards located on the rolling hills of Cannubi and Terlo Vie Nuove, in the municipality of Dogliani, in the heart of Piedmont. With the 2011 vintage, Dolcetto di Dogliani DOC becomes Dogliani DOCG. It is produced exclusively with Dolcetto grapes, harvested and selected entirely by hand. Fermentation takes place in stainless steel tanks at a controlled temperature of 28 ° C for about 4-5 days.

Recipe

Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice
  • 2 cups mixed mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry red wine
  • 4 cups vegetable stock, warmed
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a pan and sauté onion, garlic, and mushrooms until softened.
  2. Add Arborio rice and toast for 2 minutes.
  3. Deglaze with red wine and let it absorb.
  4. Add vegetable stock gradually, stirring continuously until rice is al dente.
  5. Stir in Parmesan cheese, season with salt and pepper, and serve warm.
