Pyramid Valley Angel Flower Pinot Noir 2016

Pyramid Valley Angel Flower Pinot Noir is a single-block biodynamic Pinot from the estate vineyard at Waikari in North Canterbury.

The block's name is an old country word for yarrow, the fennel-leaved pasture plant that gives biodynamics its 502 preparation and helps move sulphur and potassium through soil. The site is the cooler and more exposed of the two Pinot plots on the property, facing north, with shallow stony soils that push the wine towards perfume. Fruit was hand-picked, partly crushed by foot, fermented on its own vineyard yeasts and raised mostly in old French oak, a tenth of it new, then bottled without fining or filtration. Mike Weersing planted these vines and set the farming, and the team that followed has kept to his plans.

A decade on, this is wide open: spice, hoisin, balsamic and something like damp forest over a seam of fresh red fruit, the texture velvety and the acidity still lively. Serve at 15 degrees. Roast duck, mushroom pasta or a soft washed-rind cheese.
