Pyramid Valley North Canterbury Rosé 2021

Pyramid Valley North Canterbury Rosé is a dry rosé built mainly on old-vine Pinot Noir from Waipara.

Pinot Noir makes up 96 per cent of the blend, with Pinot Gris filling out the rest. The Pinot comes from vines planted in the early 1990s at the Waipara Springs vineyard, which the Pyramid Valley team manages; the Gris comes from the Porters vineyard nearby. Both sites are farmed without synthetic inputs. Whole bunches went to the press and the juice fermented naturally in old oak cuves and puncheons, then sat six months on lees before bottling unfined. This was Huw Kinch's first pink wine for the estate, and it is made like a white of consequence, not an afterthought from the red ferments.

Crunchy summer fruits with a subtle saline, ozone edge for interest, then real mouth-watering structure and grip. Serve it at 10 to 11 degrees, in a wine glass. Good with grilled prawns, a charcuterie plate, salmon, or tomatoes and burrata.
