Pyramid Valley Springs Chardonnay 2020

Pyramid Valley Springs Chardonnay is a single-vineyard Chardonnay from a plot of very old Mendoza vines in Waipara.

A single plot of own-rooted Mendoza vines, roughly forty years old and thought to be among the oldest Chardonnay in New Zealand, digs into the Omihi clay of this leased Waipara site. Age is only part of the appeal: the Teviot hills shelter it from the prevailing cool easterlies, and relatively warm midsummers with low growing-season rainfall make an unusual pocket in a marginal climate. Pyramid Valley has managed the vineyard since 2019 without synthetic chemicals or fertilisers. Fruit was foot-stomped in the original shed, whole-bunch pressed, fermented wild on full solids, then given twelve months on lees and six more in old puncheons over a second winter.

Reductive and focused, with ripe orchard fruit, blossom, toasted hazelnut and salty minerals gliding into a chalky finish. Exuberant acidity means there is no hurry. Serve at 12 degrees. Roast chicken, crayfish with butter, or a good aged cheddar.
