Quealy Splendido 2022

Quealy Splendido is a traditional-method sparkling wine made from organically grown Moscato Giallo on the Mornington Peninsula.

The shift from pet-nat to traditional method began in 2021, and the 2022 took the idea further by drawing entirely on the certified organic home vineyard at Balnarring. Moscato Giallo went in there in 2014, and the vines carry large, loose bunches of deep-yellow berries with thick, hardy skins, which is a useful trait in a maritime climate. Like most of the Moscato family, it brings perfume and sunny flavour. Picking came at the end of March at nine Baume to keep the aromatics lifted and the acid intact, then a very gentle press at just 500 litres per tonne to steel. After malolactic conversion came tirage, hand disgorgement, no sulphur and no dosage.

Grapey lift, orange blossom and green apple, bone dry underneath with a fine, persistent bead. Straight from the fridge at 7 to 8 degrees. Pour it before dinner, or alongside spanner crab, prosciutto and melon, or a plate of fritto misto.
