Quealy Splendido 2023

Quealy Splendido is a crown-sealed, zero-dosage sparkling wine made from organic Moscato Giallo at Balnarring.

Crown seal is the giveaway on this release, and it suits a wine made with no sulphur and no dosage, where freshness is the whole point. The 2023 draws entirely on Moscato Giallo from the organic Balnarring vineyard, picked at 10.5 Baume so the perfume and acidity both survive the trip. Pressing was gentle and the yield deliberately low, which is where the filigree aromatics and the light-footed palate weight come from. Juice was settled and racked to begin fermenting, then tiraged and bottled immediately for the second ferment in bottle. Disgorgement was done by hand, one bottle at a time.

Youthful and lifted, with muscat grape, orange peel and white flowers over a dry, clean finish. Serve it at 7 degrees. A good start to a long lunch, and equally happy with tempura vegetables, oysters, or a slice of salty pecorino.
