Quiquiriqui Destilado con Cacao is an Oaxacan Espadín mezcal redistilled with roasted beans, bottled at 47 per cent.
Santiago Matatlán, in the Valles Centrales of Oaxaca, is the town most closely associated with mezcal production, and Carlos Méndez makes the Quiquiriqui wines at his palenque there. The base is Espadín agave, pit-roasted over wood and stone in the traditional manner, crushed, fermented wild in open wooden vats and then distilled twice in alembic stills. For this bottling, home-roasted beans are added to the finished spirit and left to rest for two weeks before a third and final distillation, so the flavour is carried through the still rather than added as a sweetened extract. The result has nothing in common with a commercial coffee liqueur: it reads unmistakably as mezcal, with a balance of minerality and wood smoke, suggestions of chocolate and caramel, and a citric sourness from the beans. The nose is deceptively dry and the palate creamy, round and viscous, with a bitter edge on a long finish that stops it cloying.
Drink it neat at room temperature in a copita, in small pours, or use it in an Oaxacan old fashioned. It works with dark chocolate, mole negro and grilled meats.
