Description
Ravensworth Regional Fiano is a Fiano fermented in ceramic egg and old demi-muid from a single Hilltops vineyard.
Everything in the 2025 came off Bit of Heaven, a shale-rich Hilltops vineyard at 580 metres, and as in the previous year the wine is straight Fiano with none of the Vermentino or Grechetto that used to accompany it. The season was dry and straightforward, with harvest arriving fairly early for that elevation. Destemming came first, then pressing into a combination of ceramic eggs and older demi-muids where fermentation ran cool, and left on lees in those same vessels for a spell before bottling in late October. Neither vessel adds flavour, which leaves the fruit and the texture to do the talking.
Citrus pith, green almond and white flowers, with a cool, taut line and a gently chalky finish. Serve at 11 degrees. Good with grilled fish, a plate of calamari, or spaghetti with clams and parsley.
