Recipe

Tarte aux Légumes Provençaux (Provençal Vegetable Tart)

Ingredients:

  • 1 sheet puff pastry
  • 1 zucchini, thinly sliced
  • 1 eggplant, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 onion, caramelised
  • Fresh thyme and rosemary
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Goat cheese (optional)

Instructions:

  1. Preheat oven to 200°C. Lay puff pastry on a baking tray and prick with a fork.
  2. Layer caramelised onion, then alternate slices of vegetables in rows.
  3. Drizzle with olive oil, season with herbs, salt, and pepper.
  4. Add goat cheese if desired. Bake for 30–35 minutes until golden.
  5. Serve warm or at room temperature with Rimauresq Rosé R Reserve.
