Tarte aux Légumes Provençaux (Provençal Vegetable Tart)
Ingredients:
- 1 sheet puff pastry
- 1 zucchini, thinly sliced
- 1 eggplant, thinly sliced
- 2 tomatoes, thinly sliced
- 1 onion, caramelised
- Fresh thyme and rosemary
- 2 tbsp olive oil
- Salt and pepper, to taste
- Goat cheese (optional)
Instructions:
- Preheat oven to 200°C. Lay puff pastry on a baking tray and prick with a fork.
- Layer caramelised onion, then alternate slices of vegetables in rows.
- Drizzle with olive oil, season with herbs, salt, and pepper.
- Add goat cheese if desired. Bake for 30–35 minutes until golden.
