Sadie Family Swartland Palladius 2020

Sadie Family Swartland Palladius is a white blend built from all eleven white varieties grown in the Swartland.

Old bush-vine Chenin Blanc is the backbone, joined by Colombard, Palomino, Semillon Blanc, Marsanne, Roussanne, Verdelho, Viognier, Clairette Blanche, Grenache Blanc and the very rare Semillon Gris, drawn from seventeen separate sites. Most sit on decomposed Paardeberg granite, four on sandstone, and the oldest vines date to 1935; Eben Sadie's own younger blocks cropped at 22 hectolitres per hectare here. The fruit went through a traditional vertical press directly to clay amphorae and 725-litre concrete eggs, finished fermenting in its own time, then moved to large foudres for a two-year elevage and an unfined, unfiltered bottling.

Rich, dry and slow to open, with white peach, dried herbs, almond skin and a salty, textural finish. Decant it, and serve nearer 13 degrees than 8. Roast pork belly, a saffron fish stew or aged Manchego will all match it.
