Sadie Family Swartland Palladius 2021

Sadie Family Swartland Palladius is the estate's flagship white, a Chenin-led blend of every white grape the Swartland permits.

Seventeen vineyards contribute, most of them rooted in decomposed granite around the Paardeberg, four on sandstone, and most old enough to qualify as old vines, the earliest planted in 1935. Yields are held to 30 hectolitres per hectare even on Eben Sadie's own younger blocks. Pressing happens whole-bunch in a vertical press, with the juice running straight into clay amphorae and concrete eggs of 725 litres, after which the wine spends the balance of a twenty-four-month cycle in large wooden foudres. Sadie's stated aim each season is compact fruit and texture with as much natural acidity as the year allows.

Broader and more phenolic than his single-site whites, with quince, beeswax, dried fennel and a chewy, saline close. Twelve to 13 degrees, and give it half an hour in the glass. Try roast chicken, pork with apple, or a firm alpine cheese.
