Sadie Family Swartland Palladius 2022

Sadie Family Swartland Palladius is a textural Swartland white drawing on the district's full set of permitted white varieties.

Chenin Blanc from old bush vines anchors it, and around that sit Viognier, Roussanne, Marsanne, Clairette Blanche, Grenache Blanc, Verdelho, Palomino, Colombard, Semillon Blanc and a little of the almost extinct Semillon Gris, gathered from seventeen parcels. Granite is the common thread, though four sites lie on sandstone, and the oldest planting goes back to 1935. Everything is pressed whole into amphora and concrete egg, then raised in big foudres over twenty-four months and bottled with no fining or filtration. The freshness here is phenolic, not acidic, which is what separates it from the single-vineyard bottlings.

Deep and savoury, with dried pear, hay, toasted nuts and a grippy, salty finish that lingers. Serve at 13 degrees in a generous glass. It handles roast pork, a bouillabaisse, or slow-cooked chicken with preserved lemon.
