Sadie Family Swartland Pofadder 2021

Sadie Family Swartland Pofadder is a single-vineyard Cinsault from old bush vines on the Kasteelberg.

Vines planted in 1973 on slate and decomposed shale, west of Malmesbury, crop below 28 hectolitres per hectare and need constant watching: yields controlled, every bunch and berry sorted, and careful protection from oxygen once the fruit is in the cellar. Around half the crop goes in as whole bunches to an old open-top wooden fermenter, foot-trodden once or twice daily to keep the ferment moving, and stays a month on skins before a small basket press sends it straight to conical casks nearly thirty years old. The snake the wine is named for is native here.

Delicate but not slight, with sour cherry, pomegranate, dried thyme and a fine, dusty grip. Fifteen minutes in the fridge suits it, then serve around 15 degrees. Good with duck, charcuterie, or grilled eggplant and yoghurt.
