Description
Sadie Family Swartland Pofadder is a Swartland Cinsault grown on slate and decomposed shale near Malmesbury.
Once the most widely planted black grape in the country, Cinsault lost its place after the Second World War and has only recently been taken seriously again, with Eben Sadie among those making the case for it. The vines here went in during 1973 on the Kasteelberg, and the wine is named after the puff adder that took a worker's life on the farm in the 1940s. Half the fruit is fermented as whole bunches in an old wooden open-top vessel, trodden by foot to coax the ferment along, pressed after a month on skins, and raised in conical wooden casks of some age.
Think light, savoury red: red cherry, cranberry skin, pepper and dried scrub, with acidity that keeps it moving. Serve at 15 degrees, or chill it briefly on a hot day. Roast pork, a mushroom tart or grilled sardines all pair well.
