Risotto al Pomodoro e Basilico (Tomato and Basil Risotto)
Ingredients:
- 1 cup Arborio rice
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups chicken or vegetable stock
- 1 cup dry white wine (preferably from the Bardolino region)
- 2 large tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1/2 cup Parmesan cheese, grated
- Salt and pepper, to taste
Instructions:
- In a large pan, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3–4 minutes.
- Add the rice and stir for 1–2 minutes to toast it lightly.
- Pour in the wine and cook until it is absorbed by the rice.
- Gradually add the stock, one ladle at a time, stirring constantly and letting the liquid absorb before adding more. Continue until the rice is creamy and tender, about 18–20 minutes.
- Stir in the diced tomatoes, fresh basil, and Parmesan cheese. Adjust seasoning with salt and pepper.
