Risotto al Pomodoro e Basilico (Tomato and Basil Risotto)

Ingredients:

  • 1 cup Arborio rice
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups chicken or vegetable stock
  • 1 cup dry white wine (preferably from the Bardolino region)
  • 2 large tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions:

  1. In a large pan, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3–4 minutes.
  2. Add the rice and stir for 1–2 minutes to toast it lightly.
  3. Pour in the wine and cook until it is absorbed by the rice.
  4. Gradually add the stock, one ladle at a time, stirring constantly and letting the liquid absorb before adding more. Continue until the rice is creamy and tender, about 18–20 minutes.
  5. Stir in the diced tomatoes, fresh basil, and Parmesan cheese. Adjust seasoning with salt and pepper.
  6. Serve the risotto warm with a glass of Santa Sofia Bardolino Classico DOC 2023 for a perfect match.
