Recipe

Risotto al Limone (Lemon Risotto)

Ingredients:

  • 1 cup Arborio rice
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable stock
  • 1/2 cup dry white wine (preferably from the Veneto region)
  • Juice and zest of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pan, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3–4 minutes.
  2. Add the rice and cook for 1–2 minutes, stirring to lightly toast it.
  3. Pour in the wine and let it absorb into the rice.
  4. Gradually add the stock, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. Continue until the rice is creamy and tender, about 18–20 minutes.
  5. Stir in the lemon juice, zest, and Parmesan cheese. Adjust seasoning with salt and pepper.
  6. Serve the risotto warm, garnished with fresh parsley, alongside a glass of Santa Sofia Lugana DOC 2023 for a refreshing pairing.
