Recipe

Brasato al Valpolicella (Braised Beef with Valpolicella Wine)

Ingredients:

  • 1.5kg beef chuck or brisket
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 500ml Valpolicella red wine
  • 500ml beef stock
  • 2 tbsp tomato paste
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 160°C.
  2. In a large ovenproof pot, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then sear on all sides until browned, about 5-7 minutes. Remove the beef and set it aside.
  3. Add the onion, carrots, and celery to the pot and sauté until softened, about 5 minutes. Add the garlic and cook for another 1-2 minutes until fragrant.
  4. Stir in the tomato paste, then pour in the wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and cook for 5 minutes to reduce slightly.
  5. Add the beef stock, rosemary, and thyme to the pot. Return the beef to the pot, cover with a lid, and transfer to the oven. Braise for 2.5-3 hours, or until the beef is tender and easily shreds.
  6. Remove the beef from the pot and let it rest for 10 minutes before slicing. Serve with the braising sauce and a glass of Santa Sofia Montegradella Valpolicella DOC Classico Superiore.
