Cozze Gratinate al Forno (Baked Stuffed Mussels, Puglian-style)
Ingredients:
- 1kg fresh mussels, cleaned and bearded
- 2 cloves garlic, finely chopped
- 3 tbsp fresh parsley, chopped
- 100g breadcrumbs
- 50g grated Parmigiano Reggiano
- Zest of 1 lemon
- 4 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Steam the mussels in a covered pan with a splash of water until they just open. Remove from heat and discard any unopened shells. Separate the shells, keeping the half with the meat.
- In a bowl, combine breadcrumbs, garlic, parsley, lemon zest, grated cheese, salt, and pepper. Add enough olive oil to create a moist, crumbly stuffing.
- Spoon a bit of the breadcrumb mixture onto each mussel. Arrange on a baking tray.
- Drizzle lightly with olive oil and bake at 180°C for 10–12 minutes, until golden and crisp.
- Serve warm with lemon wedges and a chilled glass of Fiano.
