Recipe

Cozze Gratinate al Forno (Baked Stuffed Mussels, Puglian-style)

Ingredients:

  • 1kg fresh mussels, cleaned and bearded
  • 2 cloves garlic, finely chopped
  • 3 tbsp fresh parsley, chopped
  • 100g breadcrumbs
  • 50g grated Parmigiano Reggiano
  • Zest of 1 lemon
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Steam the mussels in a covered pan with a splash of water until they just open. Remove from heat and discard any unopened shells. Separate the shells, keeping the half with the meat.
  2. In a bowl, combine breadcrumbs, garlic, parsley, lemon zest, grated cheese, salt, and pepper. Add enough olive oil to create a moist, crumbly stuffing.
  3. Spoon a bit of the breadcrumb mixture onto each mussel. Arrange on a baking tray.
  4. Drizzle lightly with olive oil and bake at 180°C for 10–12 minutes, until golden and crisp.
  5. Serve warm with lemon wedges and a chilled glass of Fiano.
