Sella & Mosca Cala Reale Vermentino di Sardegna DOC is a classic expression of Sardinia’s coastal terroir, crafted from 100% Vermentino grown near Alghero in the island’s northwest.
The vines, averaging around 15 years of age, are trained using spurred cordon and Guyot methods. After careful sorting, the grapes undergo gentle pressing and a cool pre-fermentation maceration to preserve aromatics. Fermentation takes place in stainless steel at controlled temperatures, with no malolactic conversion to maintain freshness. A brief ageing on fine lees in tank adds subtle texture while preserving purity and varietal clarity.
The result is a refined, dry Vermentino that showcases the precision, structure and coastal identity of Sardinia. Perfect with seafood, light pasta dishes or as a vibrant aperitivo.

Spaghetti ai Ricci di Mare (Spaghetti with Sea Urchin)
Ingredients:
- 400g spaghetti
- 120g fresh sea urchin roe
- 3 tbsp extra virgin olive oil
- 2 garlic cloves, finely sliced
- 1 small handful fresh parsley, chopped
- 1 small pinch chilli flakes (optional)
- Salt and cracked black pepper
Instructions:
- Cook the spaghetti in well-salted boiling water until al dente.
- Meanwhile, gently warm the olive oil in a pan and sauté the garlic until fragrant.
- Add the chilli flakes if using and remove the pan from the heat.
- Drain the pasta, reserving a little cooking water.
- Toss the spaghetti with the warm oil, adding a splash of pasta water if needed.
- Gently fold through the sea urchin roe and fresh parsley just before serving.
The delicate sweetness and salinity of the sea urchin echo Vermentino’s coastal minerality and citrus freshness, creating a classic and vibrant Sardinian pairing.
