Spinifex Bête Noir 2019

Spinifex Bete Noir is a Barossa and Eden Valley Shiraz blended from a large number of small old-vine parcels.

Seventy per cent of the 2019 came from the Barossa floor and thirty from the Eden Valley, taking in the eastern foothills, Moppa and Moculta, with vine ages spanning 25 to 120 years and an average around 60. Everything was picked by hand. Whole-cluster use varied wildly from site to site, from all of it to none, settling at roughly 35 per cent across the finished blend. Wild yeast did the work, and the wine then spent twenty months on lees in French oak ranging from 225-litre barrels to 2,500-litre vats, a quarter of it new, before bottling unfiltered.

Medium-weight and savoury, with mulberry, black olive, pepper and dried herbs, the tannin fine-grained and the finish long. Serve at 17 degrees. Good with lamb chops off the grill, beef brisket, or a mushroom and thyme pie.
